This is a 245mm pattern welded gyuto, the steels used are 1095/15n20. The pattern used for this knife is a distorted Ws feather that I’ve ripped in half and put back together. I have paired this beautiful blade with a block of Ancient Redgum from Australia. The handle also has a nickel silver and black G10 spacers. This knife has a convex S-grind. The grind on this knife would be my typical of my midweight grind.
