240x53 Napalm Feather WH
240x53 Napalm Feather WH
This is a 240mm pattern welded gyuto, the steels used are 1095/15n20. The pattern used for this knife is an experimental feather pattern (Napalm Feather). When making a feather pattern, the billet of steel is hot cut down the middle of the billet with the hydraulic press. The billet is then welded back together and forged on its side to bring the pattern to the face sides of the knife. And with that, the Napalm Feather was born. This knife has a compound S-grind, which is a hollow along the middle of the blade which aids with food release. Previously, I used a platen that replicated the angle of a 48” wheel for this. As of lately, I have started using a platen that replicates a 36” wheel, I find the slightly deeper hollow creates a more acute apex. The grind on this knife is slightly higher than my normal grind with a bit more weight to it making it fall into my workhorse category.
The ferrule of this knife is made of African Blackwood with the main block of wood being Honduran rosewood burl. Together, these materials flow wonderfully together and compliment the pattern of the steel.
