240x55 Wrought Iron
This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. I would consider this knife to fit into a ‘midweight’ category. This knife has a slightly convex wide bevel grind. This knife has a new finish I have been experimenting with, it was etched in a weak acid which brings out the crazy wrought iron details. The handle of this knife is black water buffalo horn and some beaufiul figured buckeye.
Disclaimer: This wrought iron is extremely old and has large silica deposits in the iron which are naturally occurring and sometimes this results in voids in the iron. This is the nature of old wrought iron and part of what gives it its beauty.
