216x54 Ironwood Wrought Gyuto

This is a wrought iron with 26c3 core. 26c3 is a fine grained high carbon steel that is great for chef knives. The wrought iron on this knife is from an antique wagon wheel. The handle of this knife is composed of a single piece of contrasting Arizona Ironwood. This knife has a midweight grind to it that is slightly higher than I would do for a basic low bevel kasumi. After working the bevel on stones I handsanded the blade and etched in coffee. The coffee etch leaves a very strong patina on the surface. This has left a bright finish on the core steel with some character showing through the wrought.
