This San mai was forged from Sheffcut steel and unknown steel carbon cladding. This core steel is very similar to 26c3 with added Niobium for added toughness and edge retention. The blade was then polished and etched. The edge this steel takes is very keen. The handle is full tang with carbon fiber and stainless steel corby bolt fasteners. This knife has a full convex grind which was done on rotary platen. The blade was satin finished then lightly etched to show the cladding. I would consider this to a workhorse grind suitable for general kitchen use.
