This is a 250mm pattern welded gyuto, the steels used are CruforgeV/15n20. The pattern for this knife is an intricate feather pattern that has been split in half and not put back together. This is is only half of the billet. This knife has a convex edge done on a rotary platen and an S grind hollow down the center of the blade. The grind on this knife would be my typical midweight grind suitable for general kitchen tasks. This knife is fairly thick out of the handle but tapers quite drastically through the midway point, this gives a nice balance to the knife. The handle of this knife is top grade Tasmanian Blackwood with an African Blackwood ferrule. The Tasmanian Blackwood has very deep and chatoyant curls.
