This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. The handle of this knife is composed of hairy sheoke and an Arizona Ironwood ferrule. The wrought iron on this knife was sourced from an antique wagon wheel and it had a coffee etch. The coffee etch brings out the character of the wrought iron and also contrasts the core steel well. The edge bevel was stone finished then I went over it with sandpaper before the coffee etch. I would consider this a midweight knife suitable for most kitchen tasks.
