This is a pattern welded gyuto, the steels used are 1095/15n20. The pattern used for this knife is a twisted Ws pattern. This knife was forged to shape which helps the pattern flow throughout. The end result is a pattern that consistently twists down the blade, you can follow the pattern over the spine and onto the other side of the knife. This knife has a compound S-grind which is my midweight grind. The handle on this knife is spalted Missouri spalted maple with an African Blackwood ferrule.
