240 Gyuto & 165 Petty
This is a matched set forged from Sheffcut and 15n20 steels. Sheffcut is similar to 26c3 with added niobium for added toughness. The pattern for the steel is a feathered explosion pattern. Both knives were forged from the same billet. The wood handles came from the same block of flame box elder, the same is true for the African Blackwood ferrules. The figures flame box elder is naturally colored, it is similar to spalting. These knives were intentionally made to be a matched pair which includes the full size gyuto as well as a smaller petty. Both knives have convex grinds that are done on my rotary platen which are suitable for general kitchen tasks.
