This is a 245mm gyuto forged from wrought iron San mai. The wrought iron was sourced from a wagon wheel and has a kasumi polish. The kasumi was done on natural stones and I finished it off my Ohira Suita. The core steel is cruforgev which takes a nice edge and holds it very well. This knife has a single piece California Redwood burl handle. The redwood burl is top grade and some of the best I have used.
