242x53 Ironwood
242x53 Ironwood
This chef knife was forged from 26c3 steel and 15n20. 26c3 is often compared to the Japanese white steels and referred to as ‘Spicy white’. 15n20 is a steel that is commonly used for industrial sized bandsaw blades. It has a high nickel content which allows it to contrast so bright against the dark 26c3. This is a feathered pattern that has lovey flow and depth. The handle is Arizona desert ironwood and the ferrule is fossil walrus oosik. The fossil oosik is several thousand years old. This knife has a hollow ground in above the bevel to help aid in food release. I would consider this to be more of my normal grind.
