This knife was forged from a single bar of 1.2519 German Tungesten steel. The steel is similar to blue2 composition. This steel is known for taking a very keen edge as well as being easily stropped back to that keen edge. It is also known for it’s toughness. The steel has been heat treated to around 64hrc. The handle of this knife is a composed of a piece of olive wood burl reclaimed from an old cutting board. The handle shape on this one is round/oval. This knife has a convex grind and was ground on my rotary platen.
