This honyaki is made from differentially hardened 26c3. It is also referred to as ‘spicy white’ as it is similar to Japanese white steel with some added chromium and manganese. It takes a very keen edge. The handle of this knife is made from Missouri Walnut and it has a Missouri whitetail antler shed for ferrule. This knife has a convex grind and would be suitable for general kitchen use. It has a slight forward balance point and feels great in hand.
