This is a 230x56 pattern welded gyuto, the steels used are CruforgeV/15n20. The pattern for this knife is a bold flowing pattern that was forged from an end cut of a billet. This knife has a s-grind which aids in food release and lightens the blade. The grind on this knife would be my typical midweight grind suitable for general kitchen tasks. The handle of this knife is composed of fossil walrus oosik that has nice rich cream coloring. The fossil walrus oosik is a few thousand years old and sourced by the Inuits in Alaska from the permafrost. The handle has been polished to a high sheen and fit to the blade.
