This is a wrought iron gyuto with 1.2519 core. This steel is similar to aogami #2. The handle of this knife is composed of a single piece of spalted maple. The wrought iron on this knife was sourced from a local bridge built in the 1800s. This knife was stone finished and then I went back over it with sandpaper and did a light etch to bring out the character in the wrought. I would consider this a workhorse.
