This is a 213mm gyuto forged to shape from my 1084 and 15n20 Explosion pattern . This knife was hardened to an average of HRC 63. The base pattern used for this was a bold Ws that were forged in bias then tiled to create this unique patrern. The handle is Alligator Juniper with an African Blackwood ferrule. This knife has a S grind which helps with food release and to lighten the blade. I would consider this work horse grind suitable for general kitchen tasks.
